Mincemeat Cookies

Preheat oven to 375 degrees

1 cup butter
1&frac12 cups sugar
3 eggs
3 cups flour
1 teaspoon soda
1 teaspoon salt
&frac12 jar mincemeat (I prefer the mincemeat with brandy and rum.)

Beat sugar and butter until fluffy.
Add eggs and beat well.
Sift the dry ingredients together and add to the egg mixture, blending thoroughly.

Drop on an ungreased cookie sheet about 2" apart. Bake at 375 degrees for 8-10 minutes. Frost if you desire.
